Lisa: Dinner was a heap of super-healthy stir-fried greens (broccoli, cabbage, bok choy plus onion and ginger) over quinoa, with baked tofu (see archive-March 17/12) all drizzled with Sweet Sesame Vinaigrette (see archive-August 14/11) and topped with a dollop of tahini sauce. “Beyond delicious” was my hubby’s verdict.

Used a veggie pealed to create carrot “noodles” them steamed them till tender. Topped with sun dried tomato pesto

Really simple soup for dinner tonight, I love this one because you don’t need too many ingredients- I simmered 1 1/2 cups of lentils for 40 minutes in 7 cups of water. Sauteed a yellow onion and 4 cloves of garlic in olive oil and added that in, along with salt, pepper, some rice, and whatever veggies I could find. Let cook another 30 minutes and added a bit of lemon juice. Now I have enough soup to last me a few days.
